Olive & Artichoke Focaccia

This recipe can be prepared as a delicious snack, a mouth-watering starter or to complement your main dish.

Dough Ingredients:

  • 350g Flour
  • 1tbsp Sugar
  • 1.5tsp Yeast
  • 0.5tsp Salt
  • 200g Warm Water
  • 2tbsp Olive Oil

Topping Ingredients:

  • 1 Garlic Clove
  • 1tsp Sea Salt
  • 1tsp Parsely
  • 1tsp Rosemary
  • 6tsp Olive Oil 
  • 190g Thinned Artichokes
  • 100g Pitted Green Olives

Method:

To make the dough:

  1. Add ingredients into a jug.
  2. Peel and coarsely chop the garlic.
  3. Destem and finely chop the herbs.
  4. Flour the baking tray.
  5. Fit the Spiral Dough Tool to your Kenwood Kitchen Machine.
  6. Add the flour, sugar, yeast and salt into the mixer bowl.
  7. Start the machine at minimum speed.
  8. Carefully pour the oil.
  9. Mix on minimum for about 2 minutes.
  10. Knead on minimum speed for about 5 minutes until you have a smooth elastic ball of dough.
  11. Cover with a damp tea towel.
  12. Leave to prove for 1 hour or until doubled in size.
  13. Mix on minimum speed for about 1 minute.
  14. Place the dough onto a lightly floured surface.
  15. Divide the dough onto a lightly floured surface.
  16. Divide the dough into pieces and roll each piece into 12cm circles. Place them on a baking tray.
  17. Cover with lightly oiled plastic wrap.
  18. Let it prove for 30 minutes.

To make the topping:

  1. Add garlic, salt and herbs to the pester and mortar.
  2. Grind to a rough paste.
  3. Add oil to the mix.
  4. Pre-heat the oven to 200°C.
  5. Remove the plastic wrap and press your fingers into the dough to make dimples.
  6. Leave to rest for 10 minutes.
  7. Add the artichokes and olives to the dough.
  8. Spoon over the garlic and herb oil.
  9. Bake for 25 minutes at 200°C.
  10. Serve

  • 6 servings (depending on the size)
